Health Bites Breakfast IDEAS

OCTOBER 2003

 

 

·        Natural rice, toasted and steamed with dried fruit and soy milk

·        Oatmeal cooked with wheat germ and raisins, served with soy milk

·        Other grains well cooked (overnight in crockpot is great) served with dried or fresh fruit and/or soy milk

·        Waffles, whole grain, served with no-sugar fruit jams or homemade banana ice cream.

·        Scrambled tofu with hash brown potatoes and whole wheat toast or muffins

·        Creamed peas or limas on toast

·        Steamed sweet corn in season

·        Fruit soup over toast

·        Breakfast beans over toast or cornbread

·        Chipped tofu gravy on biscuits or toast

·        Granola with milk, fruit juice, fruit salad

·        Granola parfait: Layer granola and applesauce. Let stand overnight and top with Silk Vanilla creamer

·        Museli (Using quick oats toasted in oven until golden OR granola—soak overnight in juice or milk.  Add fresh and/or dried fruit in the morning (nice in summer)

·        Pancakes with applesauce or berry sauce

·        Peanut Butter Special – whole wheat toast spread with nut butter and hot applesauce.

·        Dixie toast with fruit toppings

·        Fruit muffins or date rolls and fruit salad

·        Harvest pudding or millet pudding layered with fruit served in a granola crust

·        Breakfast banana split—in place of ice cream, used cooked oatmeal or millet, top with pineapple, berry, and carob sauces.
