Patties
4 c. packed zucchini (grate fine, chop or
grind in food processor).
3 TB Chic-style seasoning OR 3 TB beefy-style
seasoning
Place ingredients in a large mixing bowl and
let set 15 minutes to form a liquid.
While waiting, prepare the following:
Add to zucchini mixture
2 onions, minced fine
2/3 c. walnuts, chopped fine
Sift in a separate mixing bowl:
½ c. nutritional food yeast flakes
2 c. gluten flour (do-pep)
1 c. quick oats
1 tsp salt
1 tsp garlic powder (or to taste)
Mix dry ingredients with zucchini
mixture. Knead well, using your
hands to develop gluten (about 5 minutes).
Set aside 30 minutes to firm up gluten.
Make into patties. Place on a sprayed cookie sheet and bake
at 350 for 20 min. Flip patties and
bake an additional 15-20 minutes.
Cover with mushroom gravy, spaghetti or barbeque sauce, or serve as
sandwich burgers with all the fixings.
Patties freeze well, so make a double batch!
