Corn Chowder for a Crowd


Steam Sauté (no added liquid necessary)

5 onions, chopped

2 ½ c minced celery

2 c minced red bell peppers

 

Add and cook 5 min

1 ¼ gal sweet corn (removed from cobs)
10 med red potatoes, finely cubed

Add to corn mixture, cook 15 min

¼ c. chick-style seasoning broth mix

1 T salt, or to taste

1 T onion powder

1 ¼ tsp. Thyme

2 T basil


 

Blenderize all but 4 cups of solids (mix both back together after blending)

 

Add to vegetable mixture

6-10 c. Silk Soy milk (depending on desired consistency)

 

Vegi-Pep Patties

4 c. packed zucchini (grate fine, chop or grind in food processor).

3 TB Chic-style seasoning OR 3 TB beefy-style seasoning

 

Place ingredients in a large mixing bowl and let set 15 minutes to form a liquid.  While waiting, prepare the following:

 

Add to zucchini mixture

2 onions, minced fine

2/3 c. walnuts, chopped fine

 

Sift in a separate mixing bowl:

½ c. nutritional food yeast flakes

2 c. gluten flour (do-pep)

1 c. quick oats

1 tsp salt

1 tsp garlic powder (or to taste)

 

Mix dry ingredients with zucchini mixture.  Knead well, using your hands to develop gluten (about 5 minutes).  Set aside 30 minutes to firm up gluten.

 

Make into patties.  Place on a sprayed cookie sheet and bake at 350 for 20 min.  Flip patties and bake an additional 15-20 minutes.  Cover with mushroom gravy, spaghetti or barbeque sauce, or serve as sandwich burgers with all the fixings.

 

Patties freeze well, so make a double batch!
